Zuppa Toscana

If you like Olive Garden you will probably recognize this soup. This recipe is so much like theirs you will be looking for a waiter when you need a refill!

The ingredients:

1 lb. Italian sausage
2 large baking potatoes
1 lg. onion
1/2 can bacon pieces
2 cloves garlic minced
2 cups kale or swiss chard chopped
2 cans chicken broth (or 1 large)
1 quart water
1 cup heavy whipping cream

Cook sausage in baking pan for 30 minutes in 350 degree oven. Drain on paper towels and cut into slices.

Cut potatoes in half and in thin slices.

Finely Chop onions.

Ok, this is how I actually do it.

Place onions, potatoes, chicken broth, water, garlic in pot and cook on medium heat until potatoes are done.

Add sausage and bacon. Salt and pepper to taste.


Simmer 10 minutes then turn to low.

Add kale and cream.

Heat through and ENJOY!!!!

  1. Oooo! That is my favorite soup! I actually made a really simple potato soup the other day that I added sausage too and it tasted just as good. :)
